For YSM, How Many KW/Adgroup?

I know tight kw grouping is good, but from your experience, how many is best? maximum to minimum.

There are no set answers. It's whatever it takes to get 5 bar quality score. In some cases you can do that with dozens or hundreds, in some cases you need just 1.

I'm going to set up my first YSM campaign tomorrow. I've around 8000kw split into 200+ adgroups. Each adgroup contains 2-60 keywords.

THough I've some experience with Adwords, I'm new to YSM.

What is this "5 bar quality score"?

Is it for ad or adgroup or kw quality score?

What if my QS is low ( only 1-2 initially ), how do I move it up?

In YSM, their quality score is pretty much 100% tied to your CTR. If your CTR is higher than your competitors you get a better quality score. Their quality is at the ad level, but gets assigned based on your keyword CTR. That's why some times you need to move a keyword to it's own ad group if it's doing well and other aren't, but that doesn't need to be the idea right off the bat.
